BBQ Corn Muffins
Servings: 12
1 lb. Byron’s Pork BBQ, thawed
1 box Cornbread mix (for making 12 regular muffins)
1 1/3 cups Milk
1/3 cup Vegetable oil or melted butter
2 large Eggs
1 cup Cheddar cheese

1.  Preheat oven to 350ºF.
2.  Spray a 12-cup muffin tin with non-stick cooking spray and set aside.
3.  In a large mixing bowl, add the cornbread mix, milk, oil, and eggs.
4.  Stir just until combined.
5.  Fold in the cheese and BBQ.
6.  Spoon into prepared muffin tin and bake until lightly browned (about 20 minutes).
7.  Serve warm.
