BBQ Chili

Barbecued Brisket Chili
1 lb. Byron's Fully Cooked Pork BBQ
1 Large onion, diced
1 can (4 oz.) Diced green chiles
1 package (2 oz.) Chili seasoning
2 cans (14.5 oz.) Chili beans
1 can (14.5 oz.) Crushed tomatoes
Optional garnish Sour cream, shredded cheese, chopped scallions
  1. Remove thawed BBQ from package, and in a medium mixing bowl separate BBQ into bite-sized pieces. Set aside.
  2. In a medium sized saucepan over medium heat, sauté onions until translucent (about 5 minutes). Add green chiles and chili seasoning and sauté, stirring often, for 1 minute more.
  3. Stir in chili beans, tomatoes, and pork. Simmer over low heat, stirring occasionally, for 30 minutes.
  4. To serve, ladle hot chili into bowls and garnish with sour cream, shredded cheese, and chopped scallions if desired.
  5. Makes: 2 quarts
